Hillbilly Soup Recipe
Ingredients
– 1 lb. lean ground beef
– 1 small onion, chopped
– 1 can (15 oz.) kidney beans, drained and rinsed
– 1 can (15 oz.) diced tomatoes
– 1 can (15 oz.) whole kernel corn, drained
– 1 can (8 oz.) tomato sauce
– 1 can (4 oz.) chopped green chilies
– 1 envelope taco seasoning mix
– 1 envelope ranch-style dressing mix
– Shredded cheddar cheese (optional)
– Tortilla chips (optional)
Instructions
1. In a large soup pot, brown the ground beef and onions over medium heat until the beef is cooked through and the onions are tender. Drain any excess fat.
2. Add the kidney beans, diced tomatoes (with liquid), corn, tomato sauce, green chilies, taco seasoning mix, and ranch-style dressing mix. Fill the tomato sauce can with water and add to the pot.
3. Stir well to combine all ingredients. Bring to a boil, then reduce heat and simmer for 20-30 minutes, stirring occasionally.
4. Serve hot, topped with shredded cheddar cheese and tortilla chips if desired.
