Hi friends! Today, we’re sharing two yummy recipes that we think you’ll love. Let’s get started!
- 600g butternut squash or pumpkin, peeled and grated
- 3 large eggs
- 200g caster sugar
- 200ml vegetable oil
- 300g plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 2 tsp ground cinnamon
- Preheat oven to 180°C/160°C fan/gas mark 4.
- In a large mixing bowl, whisk together the eggs, sugar and oil until pale and thick.
- Stir in the grated squash/pumpkin and mix well.
- Sift in the flour, baking powder, bicarbonate of soda and cinnamon. Fold everything together until you have a smooth batter.
- Pour the mixture into a greased and lined 23cm cake tin.
- Bake for around 50-60 minutes, or until a skewer inserted into the centre comes out clean.
- Allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with icing sugar to serve (optional).
