Hi friends! Today, we’re sharing two yummy recipes that we think you’ll love. Let’s get started!

Squash Cake

Squash Cake

Ingredients:

  • 600g butternut squash or pumpkin, peeled and grated
  • 3 large eggs
  • 200g caster sugar
  • 200ml vegetable oil
  • 300g plain flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 2 tsp ground cinnamon

Instructions:

  1. Preheat oven to 180°C/160°C fan/gas mark 4.
  2. In a large mixing bowl, whisk together the eggs, sugar and oil until pale and thick.
  3. Stir in the grated squash/pumpkin and mix well.
  4. Sift in the flour, baking powder, bicarbonate of soda and cinnamon. Fold everything together until you have a smooth batter.
  5. Pour the mixture into a greased and lined 23cm cake tin.
  6. Bake for around 50-60 minutes, or until a skewer inserted into the centre comes out clean.
  7. Allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  8. Dust with icing sugar to serve (optional).
