  • 1 cup milk

  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish with cooking spray.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until onion is translucent, about 5 minutes.
  3. Add spinach and cook until wilted, about 3-5 minutes more.
  4. In a large mixing bowl, whisk together eggs, milk, salt, pepper, and nutmeg. Stir in Parmesan cheese and spinach mixture.
  5. Pour mixture into pie dish and bake for 35-40 minutes, or until set and golden brown.
  6. Let cool for 5 minutes before slicing and serving.

  • 1 refrigerated pie crust
  • 1 tablespoon olive oil
  • 1 small onion, chopped

  • 4 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese

Instructions:

  1. Preheat oven to 375°F (190°C). Roll out pie crust and place in a 9-inch pie dish. Prick bottom with a fork and bake for 10-12 minutes, or until lightly golden brown. Let cool.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until onion is translucent, about 5 minutes.
  3. Add spinach and cook until wilted, about 3-5 minutes more.
  4. In a large mixing bowl, whisk together eggs, milk, salt, and pepper. Stir in spinach mixture and feta cheese.
  5. Pour mixture into pie crust and bake for 40-45 minutes, or until set and golden brown.
  6. Let cool for 5 minutes before slicing and serving.
