Salmon Salad
If you’re like me, you want a salad that’s both healthy and filling. This Salmon Salad recipe does just that, and more!
Ingredients
- 1 lb. salmon, skinless and boneless
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 head romaine lettuce, chopped
- 1/2 red onion, thinly sliced
- 1 pint cherry tomatoes, halved
- 1 avocado, diced
Instructions
- Preheat your oven to 400 degrees F.
- Pat the salmon dry and sprinkle with thyme, basil, paprika, garlic powder, salt, and pepper.
- Heat the olive oil over medium-high heat in a large oven-safe skillet.
- Place the salmon in the skillet and cook for 2 minutes.
- Flip the salmon over and place the skillet into the oven. Roast for 10 minutes, or until the salmon is cooked all the way through.
- Once the salmon is done, remove it from the oven and set it aside to cool.
- In a large bowl, combine the chopped romaine, sliced red onion, halved cherry tomatoes, and diced avocado.
- Toss with your favorite salad dressing and top with the salmon.
