Turmeric-Pickled Deviled Eggs

Ingredients:
- 8 large eggs
- 1/2 cup apple cider vinegar
- 1/2 cup water
- 1 tablespoon honey
- 2 teaspoons ground turmeric
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2 tablespoons mayonnaise
- 2 teaspoons dijon mustard
- 1/4 teaspoon smoked paprika
- 2 tablespoons chopped fresh chives
Instructions:
- Place the eggs in a large saucepan and cover with cold water. Bring the water to a boil over high heat, then reduce heat to low and gently simmer for 10-12 minutes.
- Remove the eggs from the saucepan and transfer them to an ice bath to cool. Once they’re cool, peel the eggs and cut them in half lengthwise.
- In a small saucepan, combine the apple cider vinegar, water, honey, turmeric, sea salt, and black pepper. Bring the mixture to a simmer over medium heat and stir until the honey is dissolved. Remove from heat and let cool.
- Place the egg halves in a large jar or container and pour the pickling liquid over them. Cover and refrigerate for at least 1 hour, or up to 24 hours if you prefer a stronger pickled flavor.
- When you’re ready to make the deviled eggs, remove the eggs from the pickling liquid and pat them dry with a paper towel. Carefully remove the yolks and place them in a small bowl.
- Add the mayonnaise, dijon mustard, and smoked paprika to the bowl with the yolks and use a fork to mash everything together until smooth. If the mixture seems too thick, you can add a little more mayonnaise or a splash of pickle juice from the pickling liquid.
- Spoon the yolk mixture back into the egg white halves and sprinkle with chopped fresh chives before serving.
