Morning Glory Muffins – A Nutritious and Delicious Breakfast

– 1 cup almond flour
– 1 cup gluten-free rolled oats

– 1/2 cup unsweetened applesauce

– 1/4 cup raisins
– 1/4 cup chopped walnuts
– Optional: shredded coconut for topping

Instructions:

1. Preheat your oven to 350°F and line a muffin tin with paper liners.

2. In a large bowl, combine almond flour, rolled oats, coconut sugar, baking powder, cinnamon, salt, and nutmeg.

3. In a separate bowl, whisk together applesauce, almond milk, eggs, and melted coconut oil.

4. Add the wet ingredients to the dry ingredients and stir until just combined.

5. Fold in grated carrot, crushed pineapple, raisins, and chopped walnuts.

6. Spoon the batter into the prepared muffin tin, filling each liner 3/4 full.

7. Optional: sprinkle shredded coconut over the batter for added flavor.

8. Bake for 25-30 minutes or until a toothpick inserted into the center of the muffin comes out clean.

9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
