Smoked Andouille Sausage
Ingredients:
- 2 pounds of ground pork shoulder
- 1/2 pound of pork fatback, cubed
- 2 tablespoons of minced garlic
- 1 tablespoon of salt
- 1 tablespoon of paprika
- 2 teaspoons of cayenne pepper
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of dried thyme
- 1/4 teaspoon of ground mace
- 1/4 teaspoon of ground allspice
- Hog casings
Instructions:
- Mix all the ingredients together in a large bowl.
- Refrigerate for at least 24 hours.
- Using a sausage stuffer, stuff the mixture into hog casings, making links about 4 inches long.
- Smoke the sausages at 225°F for about 4 hours.

There’s nothing quite like biting into a juicy red tomato. Try this delicious tomato and watermelon salad:
Ingredients:
- 4 cups of diced watermelon
- 2 tomatoes, diced
- 1/2 cup of crumbled feta cheese
- 1/4 cup of chopped fresh mint
- 1/4 cup of olive oil
- 1/4 cup of balsamic vinegar
- Salt and pepper to taste
Instructions:
- Mix all the ingredients together in a large bowl.
- Serve chilled.
Orange:
Sweet and savory come together in this delicious sweet potato and black bean salad:
Ingredients:
- 2 sweet potatoes, peeled and cubed
- 1 can of black beans, drained and rinsed
- 1 red pepper, diced
- 1/4 cup of chopped cilantro
- 1/4 cup of olive oil
- 2 tablespoons of lime juice
- 1 tablespoon of honey
Instructions:
- Boil the sweet potato cubes until tender, about 10 minutes.
- Mix together the sweet potatoes, black beans, red pepper and cilantro in a large bowl.
- In a small bowl, whisk together the olive oil, lime juice, and honey.
- Add the dressing to the salad and toss gently.
Yellow:
This fruity salsa is perfect for dipping or topping grilled meats:
Ingredients:
- 1 mango, diced
- 1/2 pineapple, diced
- 1 jalapeño pepper, seeded and diced
- 1/4 cup of chopped red onion
- 2 tablespoons of lime juice
- Salt and pepper to taste
Instructions:
- Mix all the ingredients together in a large bowl.
- Refrigerate for at least 30 minutes before serving.
