– 4 cups vegetable broth
– 1 tsp soy sauce
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/2 cup sour cream
1. Add sweet potatoes, onions, garlic, ginger, vegetable broth, soy sauce, salt, and black pepper to the Instant Pot.
2. Set the Instant Pot to manual mode for 10 minutes.
3. Once the time is up, allow the pressure to release naturally for 10 minutes before releasing any remaining pressure manually.
4. Use an immersion blender to blend the soup until smooth.
5. Stir in sour cream and serve hot.
