Oh, the weather’s getting colder and I’m craving some warm and comforting soup! And lucky me, I found two delicious soup recipes that will definitely satisfy my craving. Let me share them with you!
First up is the Instant Pot Ham and Potato Soup. This soup is perfect for those days when you want something hearty but don’t have a lot of time to spend in the kitchen. And with the Instant Pot doing most of the work, you can have a hot and delicious soup in no time!
Ingredients:
– 2 tablespoons olive oil
– 1 large onion, diced
– 3 cloves garlic, minced
– 4 cups chicken broth
– 1 pound ham, diced
– 4 cups potatoes, diced
– 2 cups corn kernels
– 1 teaspoon dried thyme
– salt and pepper
– parsley, chopped, for garnish
Instructions:
1. Set your Instant Pot to sauté mode and add in the olive oil.
2. Once hot, add in the onion and garlic and sauté until soft.
3. Add in the chicken broth, ham, potatoes, corn, thyme, salt, and pepper. Stir to combine.
4. Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
5. Once the time is up, allow the pressure to naturally release for 10 minutes, then use the quick release to release any remaining pressure.
6. Serve hot with a sprinkle of parsley on top.
Next, we have the Sweet Potato Soup. This soup is not only delicious but also packed with nutrients. Sweet potatoes are a great source of vitamin A, which is important for maintaining good vision and a strong immune system.

3. Add in the chicken broth, sweet potatoes, cumin, chili powder, smoked paprika, salt, and pepper. Stir to combine.
4. Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the sweet potatoes are soft and tender.
5. Use an immersion blender to blend the soup until smooth.
6. Serve hot with a dollop of sour cream and a sprinkle of chives on top.
